Stir to dissolve the sugar. Cover and leave overnight to allow the fruit to swell. Following day in another bowl add 375 grams of plain flour, 2 teaspoons of baking powder, 2 teaspoons of mixed spice, 2 eggs beaten. Gently mix ingredients together and then add to the fruit mixture. Stir to combine. Pour mixture into a greased cake tin and place in pre-heated oven. Bake at 160c for approx 90 minutes. Small size: Halve the quantity of all the ingredients but follow the same method. Pour mixture into a greased loaf tin. Bake at 160c for approx 80 minutes .
