Ingredients Wet mix: 2 eggs 1/2 cup sugar 1/4 cup oil (canola) 4 large ripe mashed kiwifruit 1 large ripe banana 1/4 teaspoon vanilla essence 1 tablespoon lemon juice 1/2 cup milk Dry mix: 3 cups self-raising flour (if you prefer to use plain flour add six teaspoons of baking powder) Method: Blend the eggs, sugar, and oil. Mix in the remaining wet mix ingredients and then fold in the dry ingredients. Place in greased muffin pans and bake at 180 degrees c for 25 minutes. When cool, add lemon icing to taste.
