Thanks for watching! Don't forget to check out the Unwind Fibrecraft Retreat website. www.unwindretreat.co.nz As promised, here is the recipe for my kiwifruit and banana muffins... Ingredients Wet mix: 2 eggs 1/2 cup sugar 1/4 cup oil (canola) 4 large ripe mashed kiwifruit 1 large ripe banana 1/4 teaspoon vanilla essence 1 tablespoon lemon juice 1/2 cup milk Dry mix: 3 cups self-raising flour (if you prefer to use plain flour add six teaspoons of baking powder) Method: Blend the eggs, sugar, and oil. Mix in the remaining wet mix ingredients and then fold in the dry ingredients. Place in greased muffin pans and bake at 180 degrees c for 25 minutes. When cool, add lemon icing to taste. Enjoy... and let me know if you bake any!

Toast the almonds. Cut the fruit jubes and marshmallows in half. Place half the almonds, fruit jubes and marshmallows into the baking tin. Melt one of the tablets of chocolate and pour over everything in the baking tin. Put the remaining almonds, fruit jubes and marshmallows into the baking tin. Melt the second tablet of chocolate and pour over everything in the baking tin. Place in the refrigerator for two hours to set. Once set take out of the baking tin and cut into bite size pieces.

Stir to dissolve the sugar. Cover and leave overnight to allow the fruit to swell. Following day in another bowl add 375 grams of plain flour, 2 teaspoons of baking powder, 2 teaspoons of mixed spice, 2 eggs beaten. Gently mix ingredients together and then add to the fruit mixture. Stir to combine. Pour mixture into a greased cake tin and place in pre-heated oven. Bake at 160c for approx 90 minutes. Small size: Halve the quantity of all the ingredients but follow the same method. Pour mixture into a greased loaf tin. Bake at 160c for approx 80 minutes .
